There are two main ways human beings listen to sound. We listen into it and we listen for patterns off it. Gongs are special instruments, which encourage both.
The most traditional method of gong playing and listening is to 'listen into the sound'. This trains us in patience, relaxation and focus. Listening into sounds is sometimes considered a "linear way of listening"; a listening for depth and clarity. It is sometimes experienced as an inner experience. Listening into sound is a very important part of sound baths.
Listening for patterns is the second method of listening. In gong playing Patterns are in the harmonic relationships of the overtones as well as in the rhythms and phrases that one may play on a gong.
